Soft Candy
Soft Candy - includes cotton candy, divinity, turkish delight, fondant, marshmallows, marshmallow creme, marzipan, soft nougat, praline paste, soft mints, truffles, soft chocolates and fudge.
Cotton Candy
Cotton candy/candy floss/fairy floss - fluffy spun sugar, made in a special machine, that melts in the mouth when eaten. Often colored pink, purple or blue, and is a popular fairground snack.
Divinity
Divinity - soft 'fluffy' white candy based on egg white and sugar. Nuts may be added. Traditionally made at Christmas-time.
Turkish Delight
Turkish Delight/Lokum - soft, sticky sweet made from starch and sugar, and often flavored with rosewater or lemon. Some include nuts, usually pistachios. They are usually made in small cubes and dusted with icing sugar.
Fondant
Fondant - used as a filling or coating for cakes and sweets, made from sugar and water, cooked to a soft-ball stage, cooled and beaten until opaque and creamy. Corn syrup is often added to prevent graining, and hydrogenated vegetable oil may be added to make it creamier. When used as a coating for cakes, it dries and becomes harder.
Marshmallow
Marshmallows today are made from sugar or corn syrup, beaten egg white, gelatin (softened), gum arabic and flavorings, and whipped to a spongy consitency, shaped into soft cylinders and rolled in cornstarch and confectioner's sugar. The traditional marshmallow recipe used extract from the roots of the marshmallow plant (Althaea officinalis) instead of gelatin.
Marshmallow creme or Marshmallow Fluff - is like melted marshmallows in texture - soft, gooey and spreadable, and does not contain gelatin.
Marzipan
Marzipan - soft, doughy, sweetened almond-based paste made of ground almonds and sugar. May also be flavored with rosewater. Usually contains at least 25% almonds by weight, and up to 50% or more. It is often made into sweets, coated in chocolate, used as a filling or icing, or shaped into small figures or fruits.
Nougat
Nougat is made from sugar or honey, roasted nuts, and sometimes candied fruit as well. It can be soft, chewy, or hard.
White Nougat is soft and made with beaten egg white.
Praline
Praline - made from ground nuts and sugar syrup, in Europe, usually almonds, sometimes hazelnuts; in the Southern U.S., pecans are usually used and cream is often added.
French praline - powder or paste made from grinding up almonds, individually coated in caramelized sugar.
