Hard candy - based on sugars cooked to the hard-crack stage.

Includes: lollipops, candy canes, brittles, hard toffees, lemon drops, peppermint drops, (and other flavored drops), rock candy, old-fashioned ribbon and 'pillow' candy, cut rock 'art' candy, etc.

Peanut Brittle

Peanut brittle - hard, brittle sheet candy made from peanuts and syrup. Traditionally made at Christmas-time.

Nougat

Nougat is made from sugar or honey, roasted nuts, and sometimes candied fruit as well. It can be soft, chewy, or hard.

Brown Nougat is the harder version, and is made with carmelized sugar.
