Caramels

Caramel - caramel-flavored candy made by boiling milk or cream, sugar, butter, corn syrup, vanilla, water and glucose gum together. Traditionally they are fairly soft, sticky, and often very chewy, but there are also hard caramels, designed to dissolve slowly in the mouth when eaten (eg. Werther's Hard Caramels).

Butterscotch - made by boiling sugar, butter, cream and vanilla to the "soft crack" stage.

Caramel creme/Dulce de Leche/Cajeta - candy made from caramelized boiled milk and sugar, or sweetened condensed milk.


Caramel is a favorite flavor, and is found in such popular delights as: caramel corn, caramel and butterscotch sauces, caramel or butterscotch brownies, and caramel covered apples.

Some Popular Caramels

Caramel "Turtle" Brownies

1 box double fudge brownie mix
1 - 14oz. bag soft caramels
1 Tbsp. heavy cream, half & half, or milk

1. Prepare double fudge brownie batter, according to directions on box. Spread half of the batter in a greased 9 x 9 pan.
2. Take half of the bag of caramels and cut into small pieces, about 1/4 inch. Spread caramel pieces over brownie mixture in pan and cover with remaining batter.
3. Bake brownies according to directions on box. Remove from oven.
4. While brownies are still warm, place the remaining (1/2 bag) of caramels and the cream or milk in a microwave-safe container. Melt by placing in the microwave on regular/high power for 40 - 45 seconds, then stir well and heat another 20 seconds. Stir again and drizzle over warm brownies. Let cool before cutting into squares.
